Ingredients

Snowballs Blueberry Lime Syrup (Makes 1 cup)
  • 1 cup granulated sugar
  • 1 cup water
  • 2 cups blueberries, fresh or frozen
  • 2 tablespoons fresh lime juice
  • ½ teaspoon lime zest

Directions

  1. Make the snowballs: Boil the water, add the tea bags and steep for 5 minutes; remove tea bags and let tea cool slightly. Pour the tea into 3 standard ice cube trays; freeze for at least 2 hours. When ready to serve, blend the frozen tea cubes in a high speed blender on low speed until light and fluffy.
  2. Make the syrup: Combine the sugar and water in a medium saucepan and bring to a boil, stirring frequently to dissolve sugar. Stir in the blueberries. Remove from heat and stir in the lime juice and zest. Let stand for 30 minutes (or longer for stronger flavor). Strain through a fine mesh strainer into a resealable container; discard the solids. Allow to cool before using. (Store the syrup in a sealed container in the fridge for up to 10 days.)
  3. Serve the snowballs: Immediately after blending, spoon the blended tea ice into glasses or cups and pour the syrup over the top, to taste.
