
Watermelon Ice Pick Cocktail

This fresh cocktail sipper tastes like summer in the South, all year long. Enjoy it at happy hour, on game day or at the dinner table with a plate of crispy Southern fried chicken or seafood.
Ingredients
- Ice
- 6 ounces freshly brewed and chilled Luzianne Iced Tea
- Watermelon Syrup, recipe follows
- 1.5 ounces vodka
- Sprig of fresh mint, for garnish
Directions
- Fill a tall glass with ice and add the tea, syrup (to taste) and vodka.
- Stir with a swizzle spoon or iced tea spoon, garnish and serve.
- 2 cups fresh watermelon juice, strained to remove seeds and pulp
- ½ cup granulated sugar
- Combine watermelon juice and sugar in a saucepan over medium heat and bring to a simmer, stirring occasionally; cook and stir until the mixture has reduced by ½ and becomes syrupy, about 25 minutes.
- Remove from heat. Once cool, transfer to a glass jar or other resealable container and store in refrigerator for up to 5 days.
