Hibiscus Tea & Pineapple Poptails

  1. BRING water to a boil. Add tea bags and remove from heat.
  2. STEEP for 15 minutes, then add honey to taste and stir. Pour tea into popsicle molds to fill only halfway, then fill molds to top with pineapple juice.
  3. FREEZE for 2 to 3 hours.
  4. POUR 1 ½ ounces chilled gin into cocktail glasses.
  5. ADD thinly sliced limes to garnish each glass.
  6. REMOVE popsicles from molds and place in glasses.
  7. POUR 2 ounces pineapple juice in each glass, stir with popsicles and enjoy.
